Ingredients
Scale
Main Ingredients
- 1 pound zucchinis (grated, about 3 medium zucchinis)
- ½ teaspoon Kosher salt (or more to taste)
- 1 large egg (whisked)
- ¼ cup all-purpose flour (or gluten free flour)
- ½ cup Parmesan cheese (freshly grated)
- ¼ teaspoon garlic powder
- ¼ cup green onion (finely chopped)
- ¼ cup dill (finely chopped)
- ¼ cup avocado oil (or more for frying)
Instructions
- Grate and salt zucchini: Grate the zucchini using a box grater and place it in a bowl. Sprinkle with kosher salt and toss to combine. Let it sit for 10 minutes to draw out excess moisture.
- Remove excess water: After resting, place the grated zucchini in a clean kitchen towel or paper towel and wring out as much liquid as possible to ensure the fritters are not soggy.
- Prepare batter: Combine the drained zucchini with the whisked egg in a bowl. Add flour, freshly grated Parmesan cheese, garlic powder, chopped green onion, and dill. Mix thoroughly until well combined.
- Heat oil: Heat the avocado oil in a non-stick skillet over medium heat, ensuring the oil is hot enough for frying but not smoking.
- Form and cook fritters: Using a ¼ cup measuring cup, scoop the batter and place it into the hot skillet. Flatten each fritter gently using the back of the measuring cup to form even discs.
- Fry until golden: Cook each fritter for about 3 to 4 minutes on each side, or until they become golden brown and crisp on the outside.
- Drain and serve: Transfer cooked fritters to a paper towel-lined plate to absorb excess oil. Serve warm with sour cream, Greek yogurt, and a squeeze of lemon for added flavor.
Notes
- Be sure to squeeze out as much liquid as possible from the grated zucchini to avoid soggy fritters.
- You can substitute the all-purpose flour with gluten-free flour to make this recipe gluten-free.
- Feel free to experiment with herbs like parsley or chives for different flavor profiles.
- Serving the fritters with a dollop of sour cream or Greek yogurt and lemon enhances the taste and adds a nice tang.
- Use avocado oil or any neutral oil with a high smoke point suitable for frying.
