Instructions

  2. Remove excess water: After resting, place the grated zucchini in a clean kitchen towel or paper towel and wring out as much liquid as possible to ensure the fritters are not soggy.
  3. Prepare batter: Combine the drained zucchini with the whisked egg in a bowl. Add flour, freshly grated Parmesan cheese, garlic powder, chopped green onion, and dill. Mix thoroughly until well combined.
  4. Heat oil: Heat the avocado oil in a non-stick skillet over medium heat, ensuring the oil is hot enough for frying but not smoking.
  5. Form and cook fritters: Using a ¼ cup measuring cup, scoop the batter and place it into the hot skillet. Flatten each fritter gently using the back of the measuring cup to form even discs.
