These Tuna Melt Pizza Baguettes are a quick and tasty twist on classic tuna melt sandwiches, combining crunchy baguettes with a colorful mix of peppers, sweetcorn, and tuna, topped with melted cheddar cheese and a tomato purée base. Perfect for a delicious lunch or light dinner.

Baguette and Toppings

  • 2 part-baked baguettes
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 198g can sweetcorn, drained
  • 225g jar tuna, drained
  • 100g cheddar cheese, grated (75g + 25g)
  • 2 tbsp tomato purée

Instructions

  1. Preheat the oven: Heat the oven to 190°C (170°C fan)/gas mark 5 to prepare for toasting the baguettes.
  2. Toast the baguettes: Halve the part-baked baguettes lengthways and place them directly on the oven shelf. Bake for 8 minutes so they develop a crispy base.
  3. Prepare the topping mix: While the baguettes toast, combine the diced red and green peppers, drained sweetcorn, drained tuna, and 75g of the grated cheddar cheese in a mixing bowl. Stir well to combine evenly.
  4. Add tomato purée and top the baguettes: Remove the toasted baguettes from the oven and place them on a baking tray. Spread 1 tbsp of tomato purée evenly over each baguette half.
  5. Assemble and bake: Divide the tuna and vegetable mixture evenly over the tomato-spread baguettes, then sprinkle the remaining 25g of grated cheddar cheese on top.
  6. Final bake: Bake the assembled baguettes on the baking tray in the oven for 12 minutes, until the cheese has melted and turned golden brown.

Notes

  • You can substitute the cheddar cheese with a milder or sharper cheese based on preference.
  • Drain the tuna and sweetcorn thoroughly to avoid soggy baguettes.
  • For an extra kick, sprinkle some chili flakes or add sliced jalapeños to the topping mix.
  • Serve immediately while hot and the cheese is gooey.
