  • 1/2 cup Panko Breadcrumbs
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Black Pepper
  • 1/4 teaspoon Cayenne Pepper
  • 2 tablespoons Olive Oil, divided
  • 4 Hamburger Buns

Instructions

  1. Prepare Flax Egg: Mix 1 tablespoon of ground flaxseed with 2 1/2 tablespoons of water in a small bowl. Place the mixture in the fridge for 15 minutes to set, creating a flax egg that will act as a binder for the burgers.
  2. Cook Onions: Heat a tablespoon of olive oil in a pan over medium heat. Add the diced half onion and cook for about 15 minutes, stirring occasionally until the onions are soft, translucent, and caramelized to bring out their natural sweetness.
  3. Combine Main Ingredients: In a large bowl, combine the crumbled tofu, mashed sweet potatoes, cooked onions, sweet corn, and chopped fresh cilantro. Mix well to evenly distribute the ingredients.
  4. Add Seasonings and Binders: Add the panko breadcrumbs, paprika, garlic powder, black pepper, cayenne pepper, 2 tablespoons of olive oil, and the flax egg mixture to the bowl. Mix everything thoroughly until the mixture holds together and is easy to form into patties.
