Instructions

  1. Season the Sweet Potatoes: In a medium bowl, combine diced sweet potatoes, olive oil, a pinch of salt, ground black pepper, onion powder, and garlic powder. Mix thoroughly to ensure all the sweet potato pieces are evenly coated with the seasoning.
  2. Air Fry the Sweet Potatoes: Place the seasoned sweet potatoes in the air fryer basket, then cook at 375 ℉ for 25 minutes. Shake the air fryer basket around the 10-minute mark to ensure even cooking and browning on all sides.
  3. Prepare the Eggs: While the sweet potatoes are cooking, heat a non-stick pan lightly coated with oil over medium heat. Once the pan is hot, crack four eggs into the pan. Season them with salt and black pepper to taste, then cover the pan to cook the eggs gently.
  4. Cook the Eggs to Sunny-Side-Up: Cook the eggs until the whites are fully set but the yolks remain runny for that perfect sunny-side-up texture.
  5. Assemble the Bowls: Divide the cooked sweet potatoes and fresh baby spinach evenly between two bowls. Top each bowl with two sunny-side-up eggs and half an avocado sliced or cubed.
