For the Salmon Burgers
- 550g / 1lb 4oz boneless, skinless salmon fillets, cut into chunks
- 2 tbsp Thai red curry paste
- Thumb-size piece fresh root ginger, grated
- 1 tsp soy sauce
- 1 bunch coriander, half chopped, half leaves picked
- 1 tsp vegetable oil
For the Salad
- 2 carrots
- Half large or 1 small cucumber
- 2 tbsp white wine vinegar
- 1 tsp golden caster sugar
- Handful coriander leaves (reserved from the bunch)
To Serve
- Lemon wedges
- Rice (optional, for serving)
Instructions
- Prepare the Salmon Mixture: Place the salmon chunks into a food processor along with the Thai red curry paste, grated ginger, soy sauce, and half of the chopped coriander. Pulse the mixture several times until it is roughly minced but not completely puréed, maintaining some texture.
- Shape the Burgers: Transfer the minced salmon mixture to a bowl. Using your hands, shape the mixture into 4 even-sized burger patties.
- Cook the Burgers: Heat the vegetable oil in a non-stick frying pan over medium heat. Carefully place the salmon burgers into the pan and cook for 4 to 5 minutes on each side, or until the burgers are golden, crisp on the outside, and cooked through in the center.
- Prepare the Salad: While the burgers are cooking, use a swivel peeler to peel long strips of carrot and cucumber into a mixing bowl. Add the white wine vinegar and golden caster sugar to the bowl and toss well until the sugar has fully dissolved and the vegetables are lightly pickled.
- Add Coriander Leaves to Salad: Toss through the reserved coriander leaves to add freshness and an herbaceous note to the salad.
- Serve: Divide the carrot and cucumber salad evenly between four plates. Serve each plate with a salmon burger and a lemon wedge for squeezing over the top. Optionally, add a serving of rice on the side to complete the meal.
