  • 1 bunch Scallion (separated into white and green parts)
  • 100 gram Mushroom, sliced
  • 60 gram Kale, chopped
  • 1/2 Red Chili Pepper, sliced
  • 100 gram Bean Sprouts

  • 1 teaspoon Dark Soy Sauce
  • 2 tablespoon Light Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 tablespoon Olive Oil

  • 1 pinch Sesame Seeds (plus extra for garnish)
  • 1 pinch Crushed Red Pepper Flakes
  • 2 packages Udon Noodles

Instructions

  1. Prepare the scallions: Cut the scallions into two parts, separating the white and green portions, then slice each and set aside keeping them separate.
  2. Mix the sauce: In a small bowl, combine the dark soy sauce, light soy sauce, sesame oil, sesame seeds, and crushed red pepper flakes. Stir well and set aside.
  3. Fry the scallion whites: Heat olive oil in a large non-stick frying pan over medium heat. Add the white parts of the scallions and sauté for about one minute until edges turn slightly golden.
  4. Add vegetables: Add the sliced mushrooms, chopped kale, and sliced red chili pepper to the pan. Stir-fry these ingredients for 4 to 5 minutes until slightly tender and fragrant.
  5. Add udon noodles: Introduce the udon noodles to the pan, breaking them apart if needed for even cooking.
  6. Add sauce and toss: Pour the prepared sauce mixture over the noodles and vegetables. Toss everything together for 3 to 4 minutes until the sauce coats all the noodles evenly.
  7. Finish with bean sprouts and scallion greens: Turn off the heat. Add the bean sprouts and the green parts of the scallions. Mix thoroughly for 30 to 40 seconds to combine well without cooking the sprouts too much.
  8. Garnish and serve: Sprinkle additional sesame seeds on top for garnish and serve immediately while hot.

  • Use fresh vegetables for the best flavor and texture.
  • Adjust the amount of red chili flakes and chili pepper according to your heat preference.
  • If udon noodles are pre-cooked, warm them in hot water before adding to the stir-fry to prevent clumping.
