Steak Marinade

  • 200g lean sirloin steaks, all visible fat removed
  • 1 tbsp miso paste (I used Clearspring)
  • Thumb-sized piece ginger, half finely grated, half cut into matchsticks
  • 4 garlic cloves, 1 finely grated, 3 sliced
  • Freshly ground black pepper, to taste

Vegetables & Noodles

  • 175g broccoli, cut into florets
  • 2 star anise
  • 2 nests of wholewheat noodles
  • 4 spring onions, cut into lengths, then finely shredded into long strips
  • 175g button mushrooms, halved if large

Cooking Oils and Condiments

  • 2 tsp rapeseed oil
  • Reduced-salt soy sauce, to serve (optional)
  • Sesame oil, to serve (optional)

Instructions

  1. Prepare the Steak Marinade: Cut the sirloin steaks into strips across the grain using a sharp knife. In a mixing bowl, combine these strips with the miso paste, finely grated ginger, finely grated garlic, and freshly ground black pepper. Toss thoroughly to coat every piece well with the marinade.
  2. Blanch the Broccoli: Bring a medium-sized pan filled with water to a boil. Add the broccoli florets and blanch them for 2 minutes until just tender but still crisp. Remove the broccoli using a slotted spoon and set aside.
  3. Cook Noodles and Aromatics: To the same boiling water, add the star anise, wholewheat noodles, and spring onions. Cook for 5 minutes or until the noodles have softened. Drain the noodles once done, reserving some of the cooking water.
  4. Stir-Fry the Steak: Heat the rapeseed oil in a non-stick wok over medium-high heat. Add the marinated steak strips and stir-fry for about 1 minute until the meat just changes color but is not fully cooked through. Remove the steak from the wok and set aside.
  5. Cook the Aromatics and Mushrooms: In the same wok, add the sliced garlic, remaining matchstick-cut ginger, and halved mushrooms. Stir-fry until the mushrooms soften, adding a splash of reserved noodle water if the pan looks dry to help create a bit of sauce.
  6. Combine and Heat Through: Return the steak strips and blanched broccoli to the wok. Toss everything well over the heat to warm through and blend the flavors. Add a little more noodle cooking water if needed to loosen the sauce to your desired consistency.
  7. Serve: Pile the cooked noodles onto plates. Top with the steaming stir-fried steak, mushroom, and broccoli mixture. Drizzle with reduced-salt soy sauce or sesame oil if desired, and serve immediately.

Notes

  • To tenderize the steak quickly, cutting across the grain is essential before marinating.
  • If you prefer a spicier kick, add a pinch of chili flakes while stir-frying the garlic and ginger.
  • Using wholewheat noodles boosts fiber content making the dish more filling and nutritious.
  • If you don’t have star anise, you can omit it; it adds a subtle licorice aroma but is not critical to the dish.
  • For a gluten-free option, substitute wholewheat noodles with rice noodles and use gluten-free soy sauce.
