Potatoes

  • 4 baking potatoes, each weighing about 225g/8oz
  • Olive oil for brushing
  • Salt (preferably flakes), to sprinkle generously
  • Black pepper, to sprinkle generously

Glaze for Sausages

  • 2 tbsp maple syrup or clear honey
  • 1 tbsp balsamic vinegar
  • 2 tsp wholegrain mustard
  • 1 tsp tomato purée

Sausages and Sauce

  • 8 pork sausages
  • 8 tbsp mayonnaise
  • 2 tsp wholegrain mustard
  • 3 tbsp snipped chives or finely chopped spring onion

Instructions

  1. Prepare the Potatoes: Rub the potatoes with a little olive oil, then sprinkle generously with salt flakes and black pepper. Wrap each potato in double-thickness foil, ensuring they are sealed well.
  2. Cook the Potatoes: Place the foil-wrapped potatoes on the barbecue and cook for 1 hour, turning frequently to ensure even cooking, until tender. Alternatively, bake them unwrapped in the oven at fan 180°C / conventional 200°C / gas mark 6 for 1 hour until cooked through.
  3. Make the Glaze: In a small bowl, mix together the maple syrup (or honey), balsamic vinegar, wholegrain mustard, and tomato purée until well combined to form a sticky glaze.
  4. Cook and Glaze the Sausages: Brush the glaze generously over the pork sausages. Place them on the barbecue, turning and basting often with more glaze, cooking for about 10 minutes or until the sausages are fully cooked and sticky on the outside.
  5. Prepare the Mayo Mixture: While the sausages cook, mix together the mayonnaise, wholegrain mustard, and chopped chives or spring onions in a small bowl to create a flavorful mayo sauce.
  6. Assemble the Hot Dog Jackets: Carefully unwrap the cooked potatoes and slice them down the middle lengthwise to open them up. Spread some of the mayonnaise mixture inside each potato and place two sticky glazed sausages in each one, similar to a hot dog.
  7. Serve: Serve the sticky hot dog jackets hot, ideally accompanied by a fresh leafy salad for a balanced and tasty meal.

  • For a vegetarian version, substitute pork sausages with plant-based sausages.
