Sweet Potatoes

  • 4 sweet potatoes

Turkey Mince Mixture

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 500g pack turkey thigh mince
  • 500g carton passata
  • 3 tbsp barbecue sauce
  • ½ tsp cayenne pepper

Toppings

  • 4 tbsp soured cream
  • ½ pack chives, finely snipped

Instructions

  1. Bake the Sweet Potatoes: Heat your oven to 200C (180C fan)/gas mark 6. Prick each sweet potato a few times with a fork, place them on a baking tray, and bake for about 45 minutes or until they are really soft when pierced with a knife.
  2. Prepare the Turkey Mince: While the potatoes are baking, heat the olive oil in a frying pan over medium heat. Add the finely chopped onion and cook gently for 8 minutes until softened but not browned. Stir in the crushed garlic and cook for another minute.
  3. Cook the Turkey: Add the turkey thigh mince to the pan. Increase the heat to high and cook for about 10 minutes, stirring and breaking up the meat, until the mince is browned and any moisture has evaporated.
  4. Add Sauces and Simmer: Pour in the passata, then fill the empty passata carton with water to a quarter full and add it to the pan. Stir in the barbecue sauce and cayenne pepper. Reduce the heat and let the mixture simmer gently for 15 minutes, stirring occasionally. Add a little extra water if it starts to dry out. Taste and adjust seasoning if necessary.
  5. Assemble and Serve: Once the sweet potatoes are soft, slice each one down the center carefully without cutting all the way through. Spoon the spicy turkey mince mixture generously over the opened potatoes. Add a dollop of soured cream on top and sprinkle with finely snipped chives. Serve immediately for a hearty and flavorful meal.

  • You can adjust the cayenne pepper to your heat preference or substitute with smoked paprika for a milder smoky flavor.
