  • 2 broccoli heads, cut into florets

  • 4 roast chicken breasts, sliced

Cooking Ingredients

  • 2 tbsp olive oil
  • 5 shallots, finely sliced
  • 2 red chillies, deseeded and sliced
  • 2 garlic cloves, sliced
  • 4 tbsp soy sauce

Instructions

  1. Steam the Broccoli: Steam the broccoli florets for 4 minutes until just tender. Transfer them to a large bowl and season to taste.
  2. Fry the Shallots and Aromatics: Heat olive oil in a pan over medium heat. Add the finely sliced shallots and fry for 2 minutes. Then add the sliced chillies and garlic; cook for an additional 4 minutes until softened and fragrant.
  3. Combine Ingredients: Using a slotted spoon, remove the cooked shallots, chillies, and garlic from the pan and add them to the bowl with broccoli, olives, and sliced roast chicken breasts.
  4. Make the Dressing and Finish: Add soy sauce to the pan and warm over medium heat briefly. Pour the warm soy sauce over the salad mixture and toss gently to combine.
  5. Serve: Enjoy the spicy chicken salad either warm or cold according to your preference.

Notes

  • For a more substantial meal, add cooked egg noodles cooled under running water.
