- 2 broccoli heads, cut into florets
- handful pitted black olives
- 4 roast chicken breasts, sliced
Cooking Ingredients
- 2 tbsp olive oil
- 5 shallots, finely sliced
- 2 red chillies, deseeded and sliced
- 2 garlic cloves, sliced
- 4 tbsp soy sauce
Instructions
- Steam the Broccoli: Steam the broccoli florets for 4 minutes until just tender. Transfer them to a large bowl and season to taste.
- Fry the Shallots and Aromatics: Heat olive oil in a pan over medium heat. Add the finely sliced shallots and fry for 2 minutes. Then add the sliced chillies and garlic; cook for an additional 4 minutes until softened and fragrant.
- Combine Ingredients: Using a slotted spoon, remove the cooked shallots, chillies, and garlic from the pan and add them to the bowl with broccoli, olives, and sliced roast chicken breasts.
- Make the Dressing and Finish: Add soy sauce to the pan and warm over medium heat briefly. Pour the warm soy sauce over the salad mixture and toss gently to combine.
- Serve: Enjoy the spicy chicken salad either warm or cold according to your preference.
Notes
- For a more substantial meal, add cooked egg noodles cooled under running water.
- Deseed the chillies if you prefer a milder heat level.
