- 500g blackberries
- 140g caster sugar
- 140g red onions, sliced
- 3 tbsp chopped fresh root ginger
- 2 tbsp Dijon mustard
- 150ml white wine vinegar
- Salt and pepper, to taste
Instructions
- Prepare Ingredients: Gather all ingredients and slice the red onions and chop the fresh root ginger finely for optimal flavor release.
- Combine Ingredients Except Vinegar: Place blackberries, caster sugar, red onions, fresh root ginger, and Dijon mustard in a large saucepan. Stir the mixture gently over medium heat until the blackberries burst, releasing their juices and blending flavors.
- Season and Add Vinegar: Season the mixture with salt and pepper to taste. Then add the white wine vinegar and stir well.
- Simmer: Allow the mixture to simmer uncovered for 10 minutes to reduce and thicken, developing the chutney’s characteristic texture and balanced flavors.
- Cool and Store: Remove from heat, let the chutney cool. Transfer it immediately to a sterilised jar and seal tightly to preserve freshness.
