Ingredients
Scale
Chocolate Base
- 16 ounces Semi-Sweet Baking Chocolate, chopped
- 1 cup Heavy Cream
- 1 teaspoon Pure Vanilla Extract
Spices
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/4 teaspoon Ground Cloves
Toppings
- Candy Cane, crushed, to taste
Instructions
- Prepare Chocolate: Place the chopped semi-sweet baking chocolate into a large heat-safe bowl and set it aside for later.
- Heat Cream and Spices: In a small saucepan over medium heat, combine the heavy cream, vanilla extract, ground cinnamon, ground nutmeg, and ground cloves. Heat the mixture until it starts to simmer gently but do not let it boil, then remove it from the heat.
- Combine and Melt: Pour the hot cream and spice mixture over the chopped chocolate. Cover the bowl with a clean kitchen towel and let it sit undisturbed for 2 minutes to soften the chocolate. Then whisk thoroughly until the chocolate is completely melted, resulting in a smooth ganache.
- Chill Ganache: Place the bowl in the refrigerator for 2 hours or until the chocolate mixture is fully set and firm enough to handle.
- Shape Truffles: Using a 1-tablespoon cookie scoop, portion out the set ganache and roll each scoop between your hands to form smooth balls. If the truffles start to soften or melt during shaping, place them in the freezer for 10 minutes to firm up again.
- Coat with Toppings: Roll each truffle ball in crushed candy cane or your preferred coatings to add festive flavor and texture. Store the finished truffles in the refrigerator until ready to serve.
Notes
- Be careful not to boil the cream to ensure a smooth ganache.
- Use food-safe gloves when rolling the truffles to keep the process clean and prevent melting from hand heat.
- Truffles can be stored refrigerated in an airtight container for up to one week.
- For alternative coatings, try cocoa powder, chopped nuts, or shredded coconut instead of candy cane.
- Allow truffles to come to room temperature briefly before serving for the best flavor and texture.
