Filling & Topping:

  • 1/8 cup unsweetened cocoa powder
  • 1/8 cup heavy whipping cream
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup graham cracker crumbs

Meringue Topping:

  • 2 large egg whites, room temperature
  • 1/2 cup granulated sugar
  • 1/8 tsp cream of tartar
  • 1/8 tsp salt

Instructions

  1. Activate Yeast and Mix Dough: In a small bowl, combine lukewarm milk, lukewarm water, granulated sugar, and instant yeast. Let the mixture sit for about 5-10 minutes until it becomes frothy. Stir in 2 tablespoons of melted unsalted butter, then gradually add all-purpose flour and salt. Mix to form a soft dough.
  2. Knead and Proof: Transfer the dough to a floured surface and knead until smooth and elastic, about 8-10 minutes. Place the dough in a greased bowl, cover with a clean cloth or plastic wrap, and let it rise in a warm area until doubled in size, approximately 1 hour.
  3. Prepare Filling and Roll Out Dough: Once risen, roll the dough out on a floured surface into a large rectangle. Brush the surface with the remaining melted butter. Evenly sprinkle the unsweetened cocoa powder, graham cracker crumbs, semi-sweet chocolate chips, and marshmallows (if using, assumed from s’mores context) over the buttered dough.
  4. Shape Rolls: Carefully roll the dough tightly from one long edge into a log. Using a sharp knife, slice the log into individual rolls about 1 to 1.5 inches thick. Arrange the rolls cut-side up on a baking sheet lined with parchment paper.
