- Whip the cream: Lightly whip the double cream just until it softly holds its shape. Do not overwhip, as it should remain airy and smooth.
- Combine mixtures: Gently fold the whipped cream into the egg yolk mixture, followed by folding in the meringue-like egg white mixture. Mix until everything is just combined, preserving as much air as possible for a light texture.
- Freeze the ice cream: Transfer the combined mixture into a suitable container, cover it tightly, and place it in the freezer until solid, which typically takes around 4-6 hours or overnight for best results.
- Serve: Remove the ice cream from the freezer about 10 minutes before serving to soften slightly for easier scooping and best texture.
