  • Author: Cleo
  • Total Time: 35 minutes
  • Yield: 1 large sandwich with fries 1x

Description

A delicious Salt Beef Club sandwich served with crispy homemade Cajun-seasoned fries. This satisfying meal combines tender salt beef, fresh avocado, crunchy radishes, and a flavorful mayonnaise-chive-mustard spread, all layered between lightly toasted bread. Perfect for a hearty lunch or casual dinner.

Ingredients

Scale

For the Cajun Fries

  • 1 big potato, cut into thin chips
  • 2 tsp olive oil
  • ½ tsp Cajun seasoning

For the Sandwich

  • 1 heaped tbsp mayonnaise
  • 1 tsp chopped chive
  • 1 tsp Dijon mustard
  • 3 slices white or brown bread, lightly toasted
  • 2 radishes, thinly sliced
  • 1 baby or ½ avocado, sliced
  • 2 slices salt beef
  • Couple Little Gem lettuce leaves

Instructions

  1. Prepare and Bake the Fries: Preheat your oven to 200°C (180°C fan) or gas mark 6. Place the thinly cut potato chips on a non-stick baking tray, drizzle with olive oil, and sprinkle with Cajun seasoning. Toss well to coat all the chips evenly, then spread them out in a single layer. Bake for 20-25 minutes, turning once halfway through, until the fries are golden and crisp. Season with salt to taste.
  2. Make the Flavored Mayonnaise: While the fries are baking, combine mayonnaise, chopped chives, and Dijon mustard in a small bowl. Mix thoroughly and season with salt and pepper to taste.
  3. Assemble the Sandwich: Spread the flavored mayonnaise mixture on two of the toasted bread slices. On one of these, layer thinly sliced radishes and avocado slices. Place the other mayonnaise-spread slice on top, spread-side up, then add the salt beef slices and some Little Gem lettuce leaves. Finish by topping with the final slice of bread.
  4. Serve: Cut the sandwich into portions and secure each with cocktail sticks if desired. Serve the sandwich alongside the crispy Cajun fries for a complete meal.

Notes

  • You can adjust the amount of Cajun seasoning according to your preferred spice level.
  • For a gluten-free option, substitute the bread with gluten-free slices.
  • To make it fully vegetarian, replace salt beef with a plant-based protein alternative.
  • The sandwich is best enjoyed fresh to keep the bread from becoming soggy.
