- ½ red cabbage, any damaged outer leaves removed
- 1 tbsp olive oil
- 2 tbsp pomegranate molasses
- 50g pomegranate seeds
Instructions
- Prepare the Oven and Cabbage: Preheat the oven to 200°C (180°C fan) or gas mark 6. Cut the cabbage into four wedges, keeping the core intact to hold the wedges together.
- Season and Roast: Arrange the cabbage wedges on a baking tray. Rub olive oil all over the wedges evenly and season well with salt and pepper. Roast in the oven for 20 minutes to soften and develop flavor.
- Add Pomegranate Molasses: Drizzle the cabbage wedges with 2 tablespoons of pomegranate molasses, then return the tray to the oven.
- Caramelize the Molasses: Continue roasting for an additional 8-10 minutes until the molasses caramelizes and forms a sticky, flavorful glaze over the cabbage.
- Garnish and Serve: Remove the cabbage from the oven and scatter 50 grams of fresh pomegranate seeds over the top to add a burst of freshness and texture. Serve warm.
