  • 750g baby potatoes, halved if large

  • Black pepper, to taste
  • 100ml water

Instructions

  1. Step 1: In a bowl, combine the lemon zest and juice, crushed garlic, dried oregano, smoked paprika, ground cinnamon, olive oil, 2 teaspoons flaky sea salt, and plenty of black pepper. Mix well to create the marinade.
  2. Step 2: Place the whole chicken in a large roasting tin and remove any string. Put the halved lemon inside the chicken cavity. Slather the marinade evenly over the chicken. Cover loosely and marinate in the fridge, uncovered, for at least 3 hours or up to 24 hours.
  3. Step 3: Remove the chicken from the fridge an hour before cooking to allow it to come to room temperature. Preheat the oven to 160°C (140°C fan, gas mark 3).
  4. Step 4: Take the chicken out of the roasting tin and spread the sliced red onions, rosemary sprigs, and baby potatoes evenly in the tin. Pour in 100ml of water, then place the chicken back on top.
