Broccoli and Roasting
- 1/2 head of broccoli, broken into florets
- 1 tbsp sesame oil
- 1 tbsp sesame seeds, plus extra to serve
- Salt, to taste
Eggs
- 2 eggs
Noodles and Toppings
- 200g ramen or dried egg noodles
- 2 spring onions, sliced
- 2 radishes, thinly sliced
- Crispy chilli oil, to serve (optional)
Dressing
- 3 tbsp sesame oil
- 1 tbsp brown miso
- Pinch of chilli flakes
- 2 tsp brown sugar
- 1–2 limes, juiced (to taste)
- 1 small garlic clove, crushed
Instructions
- Prepare and Roast Broccoli: Preheat the oven to 220°C (200°C fan)/Gas mark 8. Toss the broccoli florets with 1 tablespoon of sesame oil, 1 tablespoon of sesame seeds, and a pinch of salt. Spread the broccoli evenly on a baking tray and roast for 15-20 minutes until the broccoli is charred and tender.
- Cook the Eggs: While the broccoli roasts, bring a pan of water to a boil. Add the eggs and cook for exactly 6 minutes and 30 seconds. Remove the eggs with a slotted spoon and immediately transfer them to a bowl of ice water to cool for 3 minutes. Peel the shells once cooled.
- Prepare the Dressing: In a bowl, whisk together 3 tablespoons sesame oil, 1 tablespoon brown miso, a pinch of chilli flakes, 2 teaspoons brown sugar, the juice of 1 to 2 limes to your taste, and 1 small crushed garlic clove until smooth and well combined.
- Cook the Noodles: Cook the ramen or dried egg noodles following the package instructions. Once cooked, drain the noodles well and toss them in the prepared sesame miso dressing to coat evenly.
- Assemble the Bowls: Divide the dressed noodles between two serving bowls. Top each bowl with halved soft-boiled eggs, roasted broccoli florets, sliced spring onions, and thinly sliced radishes. Sprinkle with extra sesame seeds and drizzle with crispy chilli oil if desired for a spicy kick.
Notes
- For softer eggs, reduce cooking time slightly; for firmer yolks, cook a bit longer.
- Adjust the amount of lime juice in the dressing to achieve your preferred tanginess.
- Crispy chilli oil is optional but adds a nice spicy aroma and heat.
- If you don’t have brown miso, you can substitute with white miso, although the flavor will be milder.
- Use fresh broccoli for the best texture and flavor.
