  • Yield: Approximately 24 bites 1x

Description

These Puff Pastry Brie Bites are elegant, bite-sized appetizers perfect for any gathering. Flaky puff pastry is topped with fresh thyme, fig jam, and creamy brie, then baked to golden perfection. Finished with a drizzle of honey and a sprinkle of flaky sea salt, these savory-sweet bites offer a delightful combination of flavors and textures.

Ingredients

Scale

Puff Pastry Bites

  • 2 sheets puff pastry (thawed)
  • 1 egg yolk (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 4 tablespoons fresh thyme leaves
  • ½ cup fig jam (or your favorite jam)
  • 8 ounces brie (cut into bite sized pieces)
  • 2 tablespoons honey (for drizzling)
  • ½ teaspoon flaky sea salt (or more to taste)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
  2. Cut Puff Pastry: On a floured surface, take the thawed puff pastry sheets. Use a cookie cutter to cut out larger shapes first, then lightly score a slightly smaller shape inside each cutout to create a raised rim for a pocket.
  3. Prepare Egg Wash: In a small bowl, whisk together the egg yolk and water to form an egg wash. Use a pastry brush to brush the egg wash over each piece of puff pastry, which will give it a beautiful golden color when baked.
  4. Sprinkle Thyme: Evenly sprinkle fresh thyme leaves over the topped puff pastry pieces to add a fragrant herbal note.
  5. First Bake: Place the prepared pastry pieces on a baking sheet lined with parchment paper and bake for 13-14 minutes until puffed and golden brown.
  6. Slice Brie: While the pastry bakes, cut the brie into bite-sized pieces. For easier slicing, you can freeze the brie for about 15 minutes beforehand.
  7. Create Puff Pastry Pockets: When the pastry is done baking, remove it from the oven. Use a measuring spoon to gently press down the center of each puff pastry piece to create a pocket for the filling.
  8. Add Fillings: Spoon a small dollop of fig jam into each pastry pocket, then place a piece of brie on top of the jam.
  9. Second Bake: Return the assembled pastries to the oven for an additional 2-3 minutes, or until the brie has melted and is gooey.
  10. Serve: Remove from the oven, sprinkle additional thyme leaves on top, drizzle with honey, and finish with a sprinkle of flaky sea salt. Serve warm and enjoy!

Notes

  • Freezing the brie for 15 minutes makes slicing easier and cleaner.
  • Use any favorite jam if fig jam is unavailable for a different flavor profile.
  • Puff pastry should be fully thawed for easy cutting and shaping.
  • These bites are best served warm for the perfect melty cheese experience.
  • You can prepare the puff pastry bases in advance and assemble just before the second bake to save time.
