- 1 tbsp vegetable oil
- 1 leek, sliced
- 200g fine green beans
- 300g beansprouts
- 1 garlic clove, crushed

- 300g peeled raw king prawns
- 1–2 tbsp soy sauce
- 2 tsp toasted sesame seeds
- Pickled ginger, to serve
Instructions
- Soften noodles: Pour boiling water over the rice noodles in a large heatproof bowl and leave for 3-5 minutes to soften until tender but still slightly chewy.
- Stir-fry vegetables: Heat the vegetable oil in a large wok or frying pan over high heat. Add the sliced leek and stir-fry until it starts to soften, about 2 minutes. Then add the fine green beans and beansprouts, cooking for another 3 minutes until vegetables are crisp-tender.
- Cook prawns and add flavor: Add the crushed garlic and raw peeled king prawns to the wok. Stir and cook until the prawns start to turn pink and are nearly cooked through, about 3-4 minutes. Splash in the soy sauce and stir well, cooking until everything is fully cooked and flavors meld together.
- Combine with noodles: Drain the softened rice noodles thoroughly, then tip the contents of the wok onto a large serving dish. Add the drained noodles and toss everything together carefully to combine all ingredients evenly.
- Serve and garnish: Sprinkle the toasted sesame seeds over the top and add pickled ginger on the side for a nice tangy contrast. Serve immediately for best flavor and texture.
