Ingredients

Instructions

  1. Step 1: Pour boiling water over the rice noodles in a large heatproof bowl and leave them to soften for 3-5 minutes.
  2. Step 2: Meanwhile, heat the vegetable oil in a large wok or frying pan over high heat. Add the sliced leek and stir-fry until it starts to soften.
  3. Step 3: Add the green beans and beansprouts to the wok, cooking for another 3 minutes while stirring frequently.
  4. Step 4: Stir in the crushed garlic and raw prawns. Cook until the prawns begin to turn pink and are nearly cooked through.
  5. Step 5: Splash the soy sauce into the wok and heat everything through for a minute or so.
  6. Step 6: Drain the softened rice noodles and tip the contents of the wok onto a large serving dish. Add the noodles and gently toss to combine all the ingredients.
