Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the meatloaf.
  2. Mix Seasonings: In a large bowl, combine the eggs, Worcestershire sauce, salt, chili powder, garlic powder, onion powder, and black pepper. Mix thoroughly until well blended.
  3. Add Meat and Breadcrumbs: Add the ground beef and ground pork to the bowl, sprinkle with breadcrumbs, and gently mix until just combined. Avoid overmixing to keep the meatloaf tender.
  4. Shape Meatloaf: Line a baking sheet with parchment paper. Transfer the meat mixture onto it and shape it into a loaf approximately 4×9 inches and about 2 inches high. Spread 1/4 cup of BBQ sauce evenly over the top, sides, and ends of the loaf.
  5. Bake Initially: Bake the meatloaf in the oven at 350°F until the internal temperature reaches 145°F, approximately 40-45 minutes.
  6. Apply More BBQ Sauce and Increase Temperature: Remove the meatloaf from the oven and spread the remaining 1/4 cup of BBQ sauce over it. Then increase the oven temperature to 450°F.
  7. Finish Baking: Return the meatloaf to the oven and bake until the internal temperature reaches 155°F, about 8-10 minutes more.
  8. Rest Meatloaf: Take the meatloaf out of the oven and let it rest on the pan for at least 10 minutes until the internal temperature rises to 165°F. This resting period helps retain juices and ensures thorough cooking before slicing and serving.
