Instructions
- Preheat the Oven: Preheat your oven to 400 degrees F (200 degrees C) to prepare for roasting the beet, which will bring out its natural sweetness and soften its texture for the smoothie.
- Prepare and Roast the Beet: Trim, peel, and chop the beet into 1/2 inch cubes. Drizzle with 1 tablespoon of water, then wrap in aluminum foil, forming a sealed pouch. Roast in the preheated oven for 40 minutes or until the beet is fork-tender.
- Cool the Roasted Beet: Remove the roasted beet from the oven and allow it to cool to room temperature, ensuring it’s safe and suitable for blending.
- Blend Ingredients Together: In a blender, combine the cooled roasted beet, frozen strawberries, banana, strawberry yogurt, and honey. Blend until smooth. If needed, add milk little by little to reach your desired consistency and sweetness.
- Serve Chilled: Pour the smoothie into glasses and serve immediately while chilled for the freshest flavor and texture.
