Description

A vibrant and flavorful pineapple, beef, and ginger stir-fry combining tender rump steak with sweet pineapple chunks and aromatic ginger, all coated in a rich sauce made from soy, brown sugar, and chilli sauce. Perfect for a quick and delicious weeknight dinner served with rice and greens.

Beef Marinade

  • 400g rump steaks, thinly sliced
  • 3 tbsp soy sauce
  • 2 tbsp soft brown sugar
  • 1 tbsp chilli sauce
  • 1 tbsp rice wine vinegar

Stir-Fry

  • 2 tsp vegetable oil
  • Thumb-sized piece ginger, cut into fine matchsticks
  • 4 spring onions, cut into 3cm lengths
  • 200g (7oz) pineapple, cut into chunks
  • Handful coriander leaves, to serve
  • Rice and greens, to serve (optional)

Instructions

  1. Prepare the marinade: In a bowl, mix the thinly sliced rump steak with soy sauce, soft brown sugar, chilli sauce, and rice wine vinegar. Set aside and let it marinate for 10 minutes to infuse the flavors.
  2. Sear the beef: Heat a wok over high heat and add 1 teaspoon of vegetable oil. Lift the steak from the marinade, allowing excess liquid to drip off, and sear the beef in batches. Cook quickly until browned, then remove from the wok and set aside.
  3. Cook the aromatics: Add a bit more vegetable oil to the wok if needed, then fry the ginger matchsticks until golden and fragrant, about 1-2 minutes.
  4. Add vegetables and pineapple: Stir in the spring onions and pineapple chunks and cook for 1-2 minutes until slightly softened but still vibrant.
  5. Combine and finish: Return the seared beef to the wok and stir everything together. Pour in any remaining marinade and continue stirring for another minute until the sauce thickens and coats all the ingredients well.
  6. Serve: Remove from heat, sprinkle with fresh coriander leaves, and serve immediately with rice and steamed greens if desired.

Notes

  • For extra heat, adjust the amount of chilli sauce or add fresh sliced chilies.
  • Use a non-stick wok or a well-seasoned cast iron skillet to prevent sticking.
  • Slicing the beef thinly helps it cook quickly and remain tender.
  • If you prefer less sweetness, reduce the brown sugar slightly.
  • This dish pairs well with jasmine or basmati rice and steamed Asian greens like bok choy or gai lan.
