Ingredients

Scale

Ingredients

  • 2 large garlic cloves
  • 200ml sesame oil
  • 2 tbsp rice wine vinegar
  • 12 tsp chilli flakes
  • 2 tbsp soy sauce
  • 40g finely chopped peanuts

Instructions

  1. Prepare the garlic: Thinly slice the 2 large garlic cloves into even pieces to ensure they cook evenly and infuse the oil properly.
  2. Heat the oil and garlic: In a pan, gently heat 200ml of sesame oil over medium heat. Add the sliced garlic and sizzle until the garlic turns lightly golden and fragrant, making sure not to burn it as this would cause bitterness.
  3. Cool the infused oil: Remove the pan from heat and allow the garlic-infused sesame oil to cool to room temperature, preserving the delicate flavors.
  4. Mix the remaining ingredients: Once cooled, stir in 2 tablespoons of rice wine vinegar, 1 to 2 teaspoons of chilli flakes (adjust to your spice preference), 2 tablespoons of soy sauce, and 40 grams of finely chopped peanuts to the infused oil.
  5. Combine and store: Transfer the mixture into a 200ml jar, season with salt to taste, close the lid, and shake well to mix all ingredients evenly. Store in a cool, dark place and use as a versatile condiment.

Notes

  • Adjust chilli flakes quantity to control the heat level.
  • Use finely chopped peanuts to add a crunchy texture without overpowering the oil.
  • Store the oil in an airtight container in a cool, dry place or refrigerate to extend shelf life.
