  • 100g panettone
  • 200g rolled oats
  • 50g pumpkin seeds
  • 1 tsp ground cinnamon
  • 500g flaked almonds
  • 100g dried berries, raisins or sultanas
  • 50g dried cranberries

Wet Ingredients

  • 50ml vegetable oil
  • 50ml maple syrup
  • 50ml honey

Instructions

  1. Prepare the oven and baking tray: Preheat your oven to 160°C (140°C fan) or gas mark 3. Line a large baking tray with baking parchment unless you are using a non-stick tray, which doesn’t require lining.
  2. Process the panettone: Place the panettone pieces into a food processor and blitz until they become fine breadcrumbs. Transfer these breadcrumbs into a large mixing bowl.
  3. Combine dry ingredients: To the bowl with panettone breadcrumbs, add rolled oats, pumpkin seeds, ground cinnamon, and flaked almonds. Mix everything together evenly.
  4. Mix wet ingredients: In a separate container, combine the vegetable oil, maple syrup, and honey. Pour this mixture over the dry ingredients and stir thoroughly to ensure all the oats and nuts are fully coated.
  5. Bake the granola: Spread the coated mixture evenly across the prepared baking tray in a single layer. Place it in the oven and bake for 30-40 minutes, stirring every 10 minutes to promote even browning. Stop baking once the granola turns golden.
  6. Cool the granola: Remove the tray from the oven and allow the granola to cool on the tray for 10 minutes.
  7. Add dried fruit: Once partially cooled, mix in the dried berries, raisins or sultanas, and dried cranberries thoroughly into the granola.
  8. Final cooling and storage: Leave the granola to cool completely. When cooled, store it in an airtight container where it will keep fresh for up to one month.
  9. Serve: Enjoy the panettone granola with your choice of milk or yogurt for a tasty and wholesome breakfast or snack.
