Instructions

  1. Prepare the oven and potatoes: Preheat your oven to 190°C (170°C fan)/Gas mark 5. Prick each potato several times using a fork to allow steam to escape during baking.
  2. Season the potatoes: Rub the potatoes all over with olive oil, ensuring they are coated evenly. Then toss them with sea salt so they have a lightly salted exterior.
  3. Bake the potatoes: Arrange the potatoes on a baking sheet without overcrowding and bake in the preheated oven for 1 hour until the skins are crisp and the insides are soft.
  4. Cool and prepare for serving: Remove the potatoes from the oven and let them cool for 10 to 15 minutes so they can be handled safely.
  5. Cut and fill: Cut a small cross on the top of each potato and gently pinch the bases to open up a cavity. Add a teaspoon of half-fat soured cream to each potato, sprinkle with freshly ground black pepper, and garnish with snipped chives.
