A round baking dish with dark handles holds a baked, layered dish. The top layer is golden-brown melted cheese with white cream cheese slices scattered on it, along with dark green sage leaves and a sprinkle of black pepper. Underneath, visible from a scoop taken out with a golden spoon, is a creamy, orange-colored sauce mixed with small, fluffy gnocchi that look soft and cheesy. Ingredients

  • 1 tbsp olive oil, plus extra for drizzling
  • 2 shallots, finely chopped
  • 2 garlic cloves, crushed
  • Pinch of chilli flakes
  • 3-4 thyme sprigs, leaves picked
  • 2 tbsp sundried tomato purée
  • 150ml cream or 100g mascarpone
  • 25g parmesan or vegetarian alternative, grated
  • 500g gnocchi
  • 1 camembert (about 250g; ensure vegetarian, if needed)
  • 6 sage leaves

Instructions

  1. Step 1: Heat the olive oil in an ovenproof skillet or frying pan over low-medium heat. Add the shallots and cook for 5-8 minutes until softened.
  2. Step 2: Stir in the crushed garlic, chilli flakes, and thyme leaves. Cook for one minute, then add the sundried tomato purée, cream (or mascarpone), and half the grated parmesan. Season with salt and pepper.
  3. Step 3: Meanwhile, cook the gnocchi in boiling water according to the package instructions. Drain the gnocchi, reserving a mugful of the cooking water.
  4. Step 4: Add the cooked gnocchi to the sauce, tossing gently. Use a splash of the reserved cooking water to loosen the sauce if needed.
  5. Step 5: Preheat the grill to high. Slice the camembert and arrange the slices evenly over the gnocchi.
  6. Step 6: Rub each sage leaf with a little olive oil and place them on top of the camembert. Grill for 4-5 minutes until the cheese is golden and bubbling.
  7. Step 7: Season with freshly ground black pepper. Serve immediately for a warm, cheesy delight.

Tips & Variations

  • For added depth, try using smoked paprika instead of chilli flakes.
  • If you prefer a vegan version, substitute cream and cheese with plant-based alternatives.
  • Fresh sage can be swapped for rosemary or basil for a different herbal note.
  • Serve with a side salad or crusty bread to soak up the luscious sauce.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan over low heat, adding a splash of water or cream to loosen the sauce if it has thickened. The dish is best enjoyed fresh, as the textures of the camembert and gnocchi soften with time.

How to Serve

The image shows a round black pot filled with baked creamy pasta topped with melted golden brown cheese and uneven slices of soft white brie with light brown edges, scattered with whole sage leaves and black pepper. The pasta beneath is rich orange in color with a smooth, creamy texture visible where the pasta has been scooped with a long golden spoon resting inside the pot. A white plate to the side holds a serving of the same pasta mix with brie and a sage leaf. The pot and plate sit on a dark teal surface with a dark green cloth nearby, all arranged against a white marbled background. photo taken with an iphone --ar 4:5 --v 7

Scale

Sauce and Toppings

  • 1 tbsp olive oil, plus extra for drizzling
  • 2 shallots, finely chopped
  • 2 garlic cloves, crushed
  • Pinch of chilli flakes
  • 34 thyme sprigs, leaves picked
  • 2 tbsp sundried tomato purée
  • 150ml cream or 100g mascarpone
  • 25g parmesan or vegetarian alternative, grated
  • 1 camembert (about 250g; ensure vegetarian, if needed)
  • 6 sage leaves

Main

  • 500g gnocchi

Instructions

  1. Sauté shallots: Heat the olive oil in an ovenproof skillet or frying pan over low to medium heat. Add the finely chopped shallots and cook gently for 5-8 minutes until they become soft and translucent, developing a sweet flavor base for the sauce.
  2. Add aromatics and tomato purée: Stir in the crushed garlic, a pinch of chilli flakes, and the picked thyme leaves. Cook this mixture for about one minute until fragrant. Then add the sundried tomato purée and pour in the cream (or mascarpone). Stir well and sprinkle in half of the grated parmesan. Season with salt and pepper to taste.
  3. Cook gnocchi: Meanwhile, bring a pan of salted water to a boil. Add the gnocchi and cook following package instructions, usually until they float to the surface, about 2-3 minutes. Drain the gnocchi, reserving a mugful of the cooking water to help loosen the sauce if needed.
  4. Combine gnocchi and sauce: Add the cooked gnocchi to the pan with the sauce. Stir gently to coat the gnocchi evenly. If the sauce seems thick, add a splash of the reserved gnocchi cooking water to achieve a creamy consistency. Keep the heat low to maintain warmth.
  5. Prepare for grilling: Preheat your grill (broiler) to high. Slice the camembert into even pieces and arrange the slices evenly over the gnocchi in the skillet. Take each sage leaf and rub lightly with olive oil to enhance crispness, then scatter the sage leaves on top of the camembert slices.
  6. Grill to finish: Place the skillet under the hot grill and cook for 4-5 minutes or until the camembert is golden, bubbly, and slightly melted. Watch carefully to avoid burning. Once done, remove from the grill, add freshly ground black pepper to taste, and drizzle with a little extra olive oil if desired. Serve immediately.

Notes

  • Use vegetarian camembert and parmesan alternatives if you require the dish to be fully vegetarian.
  • If you don’t have cream, mascarpone offers a creamy and slightly tangier substitute for the sauce.
  • For a less rich version, use reduced-fat cream and omit mascarpone.
  • Gnocchi cooking times can vary—cook until they float to the surface as a sign they’re done.
  • Keep an eye on the grill step to prevent burning the cheese and sage.
  • Serve with a fresh green salad or crusty bread to round out the meal.
