  • 2 eggs

Oils

  • 1 tbsp plus 1 tsp vegetable oil
  • 2 tsp sesame oil

  • 100g Spam, finely chopped (or use ham or bacon)

Vegetables

  • 1 carrot, finely chopped
  • 3 spring onions, finely chopped
  • 1 small garlic clove, minced or finely grated (about ¼ tsp)

  • 300g cooked sushi rice
  • 2½ tsp soy sauce

Instructions

  1. Prepare the eggs: Whisk the eggs in a small bowl until well combined and set aside for use later in the recipe.
  2. Cook the eggs: Heat 1 tsp of vegetable oil in a large frying pan over high heat. Pour in the whisked eggs and, using tongs, stir or move them around the pan for about 30 seconds or until just cooked but still tender. Remove the cooked eggs from the pan and set aside.
  3. Fry the Spam: Add the remaining 1 tbsp vegetable oil to the same pan and heat over high heat. Add the finely chopped Spam and fry for about 2 minutes until the edges turn crispy and golden brown.
  4. Sauté vegetables: Add the finely chopped carrot, spring onions, and minced garlic to the pan with the Spam and fry together for 3 minutes, allowing the vegetables to soften.
  5. Add rice and soy sauce: Tip the cooked sushi rice into the pan along with 2½ teaspoons of soy sauce. Stir thoroughly to break up any large clumps of rice and combine all ingredients. Fry for another 2 minutes until the rice is heated through and mixed well with the vegetables and meat.
  6. Finish and serve: Stir the cooked eggs back into the pan along with 2 teaspoons of sesame oil. Mix everything evenly and remove from heat. Serve immediately for a delicious and satisfying meal.

Notes

  • Using day-old or refrigerated cooked rice helps prevent the fried rice from becoming mushy.
  • You can substitute Spam with ham, bacon, or any cooked cured meat of your choice.
  • Adjust the soy sauce quantity according to your salt preference or use low-sodium soy sauce for a healthier option.
  • For added flavor, consider adding a pinch of black pepper or chili flakes if you like spice.
  • The recipe is best cooked on the stovetop in a frying pan or skillet over high heat.
