Noodles and Vegetables
- 200g straight-to-wok udon noodles
- 1½ tbsp sesame oil
- 1 onion, halved and finely sliced
- Thumb-sized piece of ginger, grated
- 200g long-stemmed broccoli, stalks sliced
- 75g kimchi, finely chopped
- 100g radishes, finely sliced
- 4 spring onions, sliced
- ½ tbsp low-salt soy sauce
Eggs and Garnishes
- 2 large eggs
- 2 tsp black sesame seeds
- 1 tsp chilli flakes (optional)
Instructions
- Prepare the noodles: Place the udon noodles in a sieve over the sink and pour a kettle of boiling water over them. Toss the noodles gently to separate, then leave them to drain thoroughly.
- Cook the vegetables: Heat 1 tablespoon of sesame oil in a large frying pan over medium heat. Add the sliced onion and grated ginger, frying for about 5 minutes until they soften slightly.
- Add broccoli, kimchi, and radish: To the frying pan, add the sliced broccoli stalks, finely chopped kimchi, and sliced radishes. Continue to fry for another 5 minutes, allowing the flavors to meld and vegetables to soften.
- Toss in noodles and season: Stir the drained noodles, sliced spring onions, and low-salt soy sauce into the vegetable mixture. Mix well to combine and heat through evenly.
- Fry the eggs: In a small frying pan, heat the remaining ½ tablespoon of sesame oil. Fry the two eggs for about 3 minutes, or cook until they reach your preferred doneness.
- Serve and garnish: Divide the noodle and vegetable stir-fry into bowls, top each serving with a fried egg, and sprinkle with black sesame seeds. Add chili flakes if you prefer some heat.
Notes
- To make this dish vegan, omit the eggs or substitute with tofu.
- Adjust chili flakes according to your spice tolerance.
- Use fresh kimchi for best flavor, but store-bought is a convenient option.
