For the Chips

  • 4 very large potatoes
  • 1 tbsp vegetable oil

For the Beefburger Patties

  • 1 red onion, ½ grated and ½ finely chopped
  • 1 carrot, grated
  • 400g (14oz) beef mince
  • 2 tsp jerk seasoning (we used Bart)

For the Pineapple Relish

  • 200g (7oz) fresh pineapple (pre-cut packet), finely chopped
  • 1 red chilli, deseeded and finely chopped
  • Small handful coriander, roughly chopped
  • Juice of 1 lime

To Serve

  • Lettuce leaves
  • Burger buns

Instructions

  1. Prepare the Chips: Heat the oven to 190°C (170°C fan)/Gas Mark 5. Scrub the potatoes clean and cut them into chip shapes. Spread the chips in a single layer on a baking tray, drizzle with vegetable oil, season with salt and pepper, then toss to coat evenly. Bake for about 40 minutes, turning halfway through, until the chips are crisp and golden.
  2. Make the Burger Patties: In a large bowl, combine the grated onion, grated carrot, beef mince, and jerk seasoning. Mix thoroughly until all ingredients are evenly incorporated. Shape the mixture into 4 evenly sized patties.
  3. Cook the Burgers: Heat a non-stick frying pan over medium-high heat until hot. Cook the beef patties for 5 to 6 minutes on each side, ensuring they are fully cooked and have a nice browned crust.
  4. Prepare the Pineapple Relish: In a small bowl, mix together the finely chopped red onion, chopped pineapple, deseeded and chopped red chilli, roughly chopped coriander, and the juice of one lime. Stir well to combine all the flavors.
  5. Assemble and Serve: Place the cooked burgers onto split burger buns with a layer of fresh lettuce. Top each burger generously with the pineapple relish. Serve alongside the crispy oven-baked chips for a complete meal.

Notes

  • For extra heat, leave the seeds in the red chilli when making the relish.
  • You can substitute beef mince with turkey or chicken mince for a leaner option.
  • Make sure to toss the chips halfway through baking to ensure they cook evenly.
  • Using fresh pineapple adds juiciness and natural sweetness to the relish.
  • Allow the beef patties to rest for a few minutes after cooking to retain their juices.
