  • 1 tbsp vegetable oil
  • 1 red onion, ½ grated and ½ finely chopped
  • 1 carrot, grated
  • 400g (14oz) beef mince
  • 2 tsp jerk seasoning
  • 200g (7oz) fresh pineapple, finely chopped
  • 1 red chilli, deseeded and finely chopped
  • small handful coriander, roughly chopped
  • juice of 1 lime
  • lettuce and burger buns, to serve

Instructions

  1. Step 1: Preheat the oven to 190°C (170°C fan) or gas mark 5. Scrub the potatoes thoroughly and cut them into chips. Place the chips in a single layer on a baking tray, drizzle with vegetable oil, season with salt and pepper, and toss to coat evenly. Bake for about 40 minutes until they are crisp and golden, turning halfway through.
  2. Step 2: In a large bowl, combine the grated onion, grated carrot, beef mince, and jerk seasoning. Mix gently but thoroughly, then shape the mixture into 4 evenly sized patties.
  3. Step 3: Heat a non-stick frying pan over medium-high heat until hot. Cook the patties for 5 to 6 minutes on each side, or until cooked through and nicely browned.
  4. Step 4: To make the pineapple relish, mix the finely chopped red onion, pineapple, red chilli, coriander, and lime juice in a small bowl. Stir well to combine.
  5. Step 5: To serve, place each cooked burger in a split bun with some fresh lettuce and a generous spoonful of pineapple relish. Serve alongside the crispy chips for a complete meal.
