- 2 medium artichokes (trimmed)
- 1 cup water
- ½ lemon (sliced)
- 2 bay leaves

- 2 cloves garlic (grated)
- ½ tsp smoked paprika
- 3 tbsp lemon juice
- ¼ tsp sea salt
- ½ cup mayonnaise
Instructions
- Prepare the Artichokes: Cut the stalks off the artichokes and slice 1 inch from the tip of each artichoke. Peel away the bottom two rows of leaves. Trim the sharp ends off the remaining leaves using scissors, removing about ¾ to 1 inch from each leaf’s tip for easier handling.
- Set Up Instant Pot: Place the sliced lemons, smashed garlic cloves, bay leaves, and 1 cup of water inside the Instant Pot. Insert a steamer rack to keep the artichokes above the water level.
- Steam the Artichokes: Place the trimmed artichokes stem side up on the steamer rack. It’s fine to stack them if preparing more than two. Close the Instant Pot lid securely and set the pressure valve to sealing.
- Pressure Cook: Select high pressure and cook for 10 minutes, adjusting time based on artichoke size if needed. After cooking, press cancel and carefully perform a manual pressure release by turning the valve to venting.
- Remove and Serve: Use tongs to carefully lift the artichokes out. Serve whole or sliced in half as preferred.
- Make the Aioli: In a bowl, combine the grated garlic, smoked paprika, lemon juice, sea salt, and mayonnaise. Mix thoroughly until smooth. You can prepare this a few days ahead for convenience.
