  • 1 Onion, finely chopped
  • 1 Green Chili Pepper, finely chopped
  • 1 Tomato, finely chopped
  • 1 teaspoon Chili Powder
  • 1/4 teaspoon Ground Turmeric
  • Salt, to taste
  • 1 handful Fresh Cilantro, chopped
  • Oil, as needed for sautéing

Dough & Finishing

  • 8 ounce Crescent Roll Dough
  • 1 Organic Egg (for egg wash)
  • Additional Fresh Cilantro for garnish
  • Ketchup, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) to ensure it’s ready when the crescent ring is assembled.
  2. Prepare Egg Mixture: Crack 5 of the 6 eggs into a bowl, discard the shells, and whisk them well. Set aside.
  3. Sauté Vegetables and Spices: Heat oil in a pan over medium heat. Add the chopped onion and sauté until translucent without browning. Stir in the chopped green chili and tomato along with salt to taste. Cook for 2 minutes, then add chili powder and turmeric, continuing to sauté for another 2 minutes to blend the flavors.
  4. Cook Eggs: Pour the whisked eggs into the pan with the sautéed vegetables. Stir continuously and cook for 1 to 2 minutes until the eggs are fully cooked but still soft. Turn off the heat and fold in the chopped fresh cilantro for an aromatic finish.
  5. Prepare Dough Base: Unroll the crescent roll dough and separate the triangular sheets, laying them out flat on a plate.
  6. Form Crescent Ring Shape: Place a piece of parchment paper on a flat surface and put a small bowl in the center as a guide. Arrange the crescent dough triangles around the bowl so the shorter sides touch the bowl and overlap slightly, with the points facing outward, forming a sun shape.
  7. Add Filling: Spoon the scrambled egg mixture in a ring around the bowl on the wider parts of the crescent triangles, spreading evenly without getting too close to the edges.
  8. Seal the Ring: Carefully remove the bowl from the center. Fold each crescent triangle’s point over the filling and tuck the end under the dough toward the inner side of the ring to seal the crescent ring shape.
