- 2 tbsp olive oil
- 400g beef mince
- 1 onion, finely chopped
- 1 green pepper, finely chopped
- 1 tsp garlic granules
- 1 tsp smoked paprika
- 1 tsp light brown soft sugar
- 1 tbsp malt vinegar
- 4 tbsp ketchup
- 1 tbsp Dijon mustard or 1⁄2 tsp mustard powder
- 300ml beef stock
- 4 burger buns, split
- Chilli sauce, to serve (optional)
Instructions
- Brown the beef mince: Heat half the olive oil in a frying pan over medium heat. Add the beef mince, crumbling it with a wooden spoon, and fry for about 10 minutes until browned all over. Transfer the browned mince to a plate.
- Sauté the vegetables: In the same pan, heat the remaining oil and cook the finely chopped onion and green pepper for 6-8 minutes until softened.
- Add seasoning and combine: Sprinkle in the garlic granules, smoked paprika, and light brown soft sugar. Return the browned beef mince and any juices back to the pan, stirring everything together. Cook for 1-2 minutes to allow the flavors to meld.
- Add liquids and simmer: Splash in the malt vinegar, then stir through the ketchup and Dijon mustard or mustard powder. Pour in the beef stock, bring the mixture to a simmer, then reduce the heat to low and gently bubble for 15-20 minutes until thick and glossy. Taste and season with salt or pepper if needed.
- Prepare to serve or freeze: For freezing, cool the mixture completely before placing it in an airtight container or dividing into freezer bags. Freeze for up to three months. To serve, reheat gently in a pan until piping hot.
- Toast the buns and assemble: Toast the burger buns in a hot pan until golden. Spoon the sloppy joe mixture onto the buns, and serve topped with optional chilli sauce if desired.

- To freeze, cool the sloppy joe mixture completely and store in airtight containers or freezer bags for up to 3 months.
- Reheat thoroughly in a pan until piping hot before serving.
