Description

This Healthy Taco Bowls recipe offers a flavorful and nutritious alternative to traditional tacos by using fresh ingredients and lean ground beef. Served over crisp iceberg lettuce and topped with a zesty yogurt lime crema, this dish is perfect for a quick weeknight dinner that’s both satisfying and lighter on calories.

Ingredients

Scale

Main Ingredients

  • 2 lbs 80/20 ground beef (or any ground meat)
  • 1 large onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • 68 tbsp Easy Homemade Taco Seasoning
  • Salt as needed
  • 1 head iceberg lettuce
  • Tomatoes, cut into pieces
  • Radishes, sliced
  • Fresh cilantro, chopped

Yogurt Lime Crema

  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 lime, juiced
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 12 tbsp water (to thin the sauce)
  • Lena’s Kitchen Pickled Onions (optional topping)

Instructions

  1. Prepare the Yogurt Lime Crema: In a bowl, whisk together the plain Greek yogurt or sour cream, lime juice, sea salt, garlic powder, and water until smooth. Set this sauce aside to let the flavors meld while you prepare the rest of the dish.
  2. Sauté Onion and Garlic: Heat olive oil in a large frying pan over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent. Add the garlic and sauté for an additional 1 minute to release its aroma without burning.
  3. Cook the Ground Meat: Add the ground beef to the pan. Use a spatula to break it apart and cook until no pink remains, approximately 7 minutes. Stir frequently to ensure even cooking and prevent sticking.
  4. Add Taco Seasoning: Stir in the homemade taco seasoning evenly throughout the cooked meat and cook for another 3 minutes to develop the flavors fully.
  5. Assemble the Taco Bowls: Cut the iceberg lettuce into wedges or large pieces to act as a fresh, crisp base. Top each serving with a generous portion of seasoned meat, diced tomatoes, sliced radishes, chopped cilantro, and pickled onions if desired.
  6. Drizzle Yogurt Lime Crema: Spoon the yogurt lime crema over the assembled taco bowls for a creamy and tangy finish. Add an extra sprinkle of taco seasoning on top for enhanced flavor.

Notes

  • You can substitute the ground beef with ground turkey or chicken for a leaner option.
  • Adjust the amount of taco seasoning based on your spice preference.
  • Lena’s Kitchen Pickled Onions add a tangy crunch, perfect for balancing the rich meat.
  • Use iceberg lettuce for its crisp texture, or switch to romaine for added nutrients.
  • To make the yogurt lime crema thinner or thicker, adjust the water quantity accordingly.
