Description

A fluffy and delightful German Apple Pancake featuring caramelized cinnamon apples baked in a rich vanilla batter. Perfect for a cozy breakfast or brunch, this recipe combines the sweetness of brown sugar and warm spices with a tender, golden pancake base.

Ingredients

Scale

Batter

  • 2 Eggs
  • 1/2 cup Milk
  • 1/2 teaspoon Vanilla Extract
  • 1/2 cup All-Purpose Flour
  • 1 pinch Salt

Apple Topping

  • 1 Apple, peeled, cored, and thinly sliced
  • 2 tablespoons Butter
  • 1/2 teaspoon Ground Cinnamon
  • 1 pinch Ground Nutmeg
  • 1/4 cup Brown Sugar

Instructions

  1. Prepare the batter: In a bowl, whisk together 2 eggs, 1/2 cup milk, and 1/2 teaspoon vanilla extract until smooth and combined. Gradually add 1/2 cup all-purpose flour and a pinch of salt, mixing just until incorporated without overmixing.
  2. Caramelize the apples: Melt 2 tablespoons of butter in a medium to high heat cast iron skillet over the stovetop. Add the peeled and sliced apple along with 1/2 teaspoon ground cinnamon and a pinch of ground nutmeg. Cook, stirring occasionally, for about 2 minutes until the apples begin to soften.
  3. Add sugar to caramelize: Sprinkle 1/4 cup brown sugar over the softened apples and continue cooking for an additional minute or two, until the sugar melts and lightly caramelizes around the apples.
  4. Combine and bake: Pour the prepared batter evenly over the caramelized apples in the skillet. Transfer the skillet carefully to a preheated oven set to 400°F (200°C). Bake the pancake for 20 to 25 minutes until the batter is puffed and golden brown.
  5. Serve: Remove from the oven, slice, and serve warm. Enjoy the comforting aroma and delicious taste of this classic German apple pancake.

Notes

  • Use a cast iron or oven-safe skillet to bake the pancake directly.
  • Make sure apples are thinly sliced to soften quickly and evenly.
  • Do not overmix the batter to keep it light and fluffy.
  • Serve immediately as the pancake will deflate when cooling.
  • Optional: dust with powdered sugar or drizzle with maple syrup for extra sweetness.
