Noodles and Vegetables
- 250g medium egg noodles

- bunch spring onions, thinly sliced lengthways
- 300g bag beansprouts
Prawns and Seasoning
- 4 garlic cloves, finely chopped
- 1 red chilli, finely chopped
- 400g raw peeled tiger prawns
- 1 tbsp soft brown sugar
- 1 tbsp dark soy sauce
Instructions
- Cook the Noodles: Follow the package instructions to cook the egg noodles until tender. Once cooked, rinse them with cold water and drain well. Toss the noodles with 1 teaspoon of sesame oil to prevent sticking and add a subtle nutty flavor.
- Prepare the Vegetables: Heat 2 teaspoons of groundnut oil in a non-stick wok over medium-high heat. Stir-fry most of the sliced spring onions and all the beansprouts for about 2 minutes until they become tender but still retain some crunch. Add the noodles to the wok and warm them through. Stir in the remaining sesame oil for extra flavor, then transfer this mixture onto a serving dish.
- Cook the Prawns: Wipe out the wok carefully to remove any residue and add the remaining groundnut oil. Add the chopped garlic and chili, cooking for about 10 seconds to release their aromas without burning. Add the raw tiger prawns and stir-fry for 2 to 3 minutes until they turn pink and are just cooked through.
- Season the Prawns: Stir in the soft brown sugar and dark soy sauce, allowing the mixture to bubble briefly until the sugar melts and coats the prawns evenly.
- Assemble and Serve: Spoon the cooked prawns along with the sauce on top of the noodle and vegetable bed. Sprinkle the remaining spring onions over the dish and drizzle with extra sesame oil if desired for an enhanced nutty aroma. Serve immediately for the best flavors.
