Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower, cut into florets
  • 8 ounces of mushrooms, sliced (cremini or button mushrooms recommended)
  • 4 cloves of garlic, minced
  • Fresh parsley, chopped (for garnish)
  • Juice of half a lemon (for brightness)

Seasonings & Fats

  • 2 tablespoons of olive oil
  • 1 tablespoon of butter (optional for extra richness)
  • 1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes (optional for a bit of heat)

Instructions

  1. Preparing the Vegetables: Wash the cauliflower thoroughly under cold water and shake off excess water. Cut it into bite-sized florets around 1-2 inches. Slice the mushrooms; if they are large, cut into quarters. Peel and mince the garlic cloves. Chop the fresh parsley for garnish and set it aside.
  2. Cooking Process: Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the cauliflower florets and sauté for 5 to 7 minutes until they start to turn golden and soften slightly. Add the sliced mushrooms to the skillet and cook for an additional 5 minutes until the mushrooms release their moisture.
  3. Adding Garlic and Seasonings: Stir in the minced garlic and cook for 1 to 2 minutes until fragrant and lightly golden. Sprinkle in the dried thyme, salt, pepper, and red pepper flakes if using. Stir everything well and cook for another 2 to 3 minutes to blend the flavors.
  4. Finishing with Butter and Lemon: If using, add the tablespoon of butter now and stir it into the mixture until melted and fully incorporated. Remove the skillet from heat and squeeze the juice of half a lemon over the vegetables, stirring to combine.
  5. Garnishing and Serving: Taste and adjust seasoning if necessary. Finally, sprinkle chopped fresh parsley over the top for garnish. Serve warm as a side dish or a vegetarian main.
