Mushrooms and Toppings
- 4 portobello or field mushrooms, stalks trimmed

Cheese Mixture
- 50g vegetarian Gruyère, grated
- 1 garlic clove, crushed
- 1 tbsp butter, softened
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Grill: Heat your grill to a high temperature to ensure the mushrooms cook quickly and gain a nice char without becoming too soft.
- Oil the Mushrooms: Rub the trimmed mushrooms with the sunflower oil to prevent sticking and help them cook evenly on the grill.
- Grill the Mushrooms: Place the mushrooms on a baking sheet and grill them for approximately 3 minutes on each side. The mushrooms should be cooked through but remain firm in texture.
- Make the Cheese Mixture: In a bowl, combine the grated vegetarian Gruyère, crushed garlic, softened butter, and a pinch of salt and freshly ground black pepper. Mix until well incorporated.
- Top Mushrooms with Cheese: Spoon the cheese mixture evenly into each grilled mushroom. Return them to the grill until the cheese melts and becomes bubbly.
- Toast the Buns: Lightly toast the cut sides of the ciabatta buns until they are crisp. This adds texture and prevents the buns from becoming soggy once the fillings are added.
- Assemble the Burgers: Stuff each toasted bun with a cheese-topped mushroom and add fresh lettuce, sliced tomatoes, and red onions to suit your taste. Serve immediately while warm.
