Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 tablespoons taco seasoning (or more to taste)
  • 14 ounces black beans, drained & rinsed
  • 16 ounces salsa (use your favorite)
  • 1 ½ cups shredded cheddar cheese, divided

For Serving

  • ¼ cup sour cream
  • ¼ cup cilantro, chopped
  • Tortilla chips

Instructions

  1. Cook the Ground Beef: Heat a heavy-bottomed skillet over medium-high heat. Add ground beef and cook for about 2 minutes, breaking it apart as it cooks until browned. Remove the beef from the skillet and set aside.
  2. Sauté the Onions: Return the skillet to medium heat, add the chopped onions, and cook for around 5 minutes until they become translucent, stirring frequently to prevent sticking.
  3. Add Taco Seasoning and Beef: Add the cooked ground beef back into the skillet with the onions. Sprinkle in the taco seasoning and stir well to combine all the flavors.
  4. Mix in Beans, Salsa, and Cheese: Stir in the drained and rinsed black beans, salsa, and 1 cup of shredded cheddar cheese, mixing until everything is evenly combined.
  5. Broil to Melt Cheese: Sprinkle the remaining ½ cup of cheddar cheese evenly over the top of the skillet mixture. Transfer the skillet to the oven under the broiler. Broil for a few minutes until the cheese is bubbly and browned, watching carefully to avoid burning.
  6. Serve and Garnish: Remove the skillet from the oven and serve immediately. Garnish with dollops of sour cream, chopped cilantro, and tortilla chips on the side, or any additional favorite taco toppings. Enjoy!

Notes

  • Feel free to substitute ground turkey or chicken for a leaner option.
  • If you prefer it spicier, increase the taco seasoning or add diced jalapeños.
  • For a vegetarian version, replace ground beef with sautéed mushrooms or plant-based meat alternatives.
  • Use gluten-free taco seasoning and verify salsa ingredients to keep this recipe gluten free.
  • Keep an eye on the skillet under the broiler to prevent the cheese from burning.
