Description
These easy mini beef wellingtons combine tender, perfectly cooked beef fillets with savory mushroom pâté and Parma ham, all wrapped in golden, flaky puff pastry. Pastry and Fillings
- 320g puff pastry sheet
- 100g roasted mushroom pâté
- 4 slices Parma ham
- 1 egg, beaten (for egg wash)
Instructions
- Prepare and cook the steaks: Heat the air fryer to its highest setting. Brush the beef fillet steaks with olive oil and season with salt to taste. Place them in the air fryer basket and cook for 4 minutes. Once cooked, remove the steaks and let them cool completely to ensure they won’t melt the pastry later.
- Prepare the pastry: While the steaks are cooling, take the puff pastry sheet out of the fridge and allow it to sit at room temperature for 10 minutes. This will make it easier to handle and prevent cracking when wrapping.
- Assemble the parcels: Lay two slices of Parma ham in a cross shape on a clean surface. Place one cooled beef fillet in the center of the ham cross. Spoon approximately 50g of roasted mushroom pâté on top of the steak, shaping it into a small dome for an aesthetic presentation. Fold the Parma ham over the pâté and beef to create a sealed parcel. Repeat this process for the second steak and remaining Parma ham.
- Wrap with puff pastry: Roll out the puff pastry if needed, and cut it into two large enough squares to completely encase each ham-wrapped beef parcel. Place each parcel in the center of a pastry square, then fold and seal the edges, trimming any excess pastry. Ensure the parcels are sealed well to prevent leakage during cooking.
- Brush with egg wash: Using a pastry brush, coat the entire surface of each wrapped parcel with the beaten egg. This glaze will give the pastry a beautiful golden brown finish once cooked.
- Cook the beef wellingtons: Preheat the air fryer again if necessary. Place the wrapped parcels into the air fryer basket, leaving space between them for even air circulation. Cook at the highest setting for 8-10 minutes or until the pastry is crisp and golden brown and the filling inside is heated through to your preferred doneness.
- Serve: Remove the mini beef wellingtons from the air fryer and let them rest for a couple of minutes before serving. This allows the juices to redistribute, making for a tender and flavorful bite.
