- 300ml double cream
- 175g caster sugar
- 1 very ripe Charentais melon, peeled, deseeded, and chopped into small chunks
- Juice of 1 lemon

Instructions
- Prepare the Cream Mixture: Tip the double cream and caster sugar into a pan and bring to a boil over medium heat. Stir continuously until the sugar has fully dissolved, then remove the pan from the heat and set aside to cool slightly.
- Process the Melon: Place the chopped melon and lemon juice into a food processor and blitz until smooth, creating a fresh melon puree.
- Combine Cream and Melon: Pour the warm cream mixture onto the melon puree in the food processor and blitz again to combine thoroughly into a smooth mixture.
- Churn the Ice Cream: Pour the combined mixture into an ice-cream machine and churn according to the manufacturer’s instructions until the ice cream is thick and semi-frozen.
- Freeze: Transfer the churned ice cream to a freezerproof container and freeze until firm, at least 3-4 hours or overnight.
- Serve: Scoop the melon ice cream into bowls and serve topped with fresh raspberries for a vibrant, fruity contrast.

- Using a very ripe Charentais melon ensures the ice cream is naturally sweet and flavorful.
- If you don’t have an ice-cream machine, pour the mixture into a container and freeze, stirring every 30 minutes until firm to prevent ice crystals.
- The lemon juice helps balance the sweetness and maintain a fresh flavor.
- For a lighter version, try using single cream instead of double cream, but expect a less rich texture.
