Bread Pudding Base
- 150ml whole milk
- 140g white bread
- 50g raisins or dried cherries
- 568ml pot of fresh custard

- 5–7 tbsp caster sugar
Instructions
- Preheat the Oven: Set the oven to 140°C (fan 120°C or gas mark 1) to ensure it reaches the right temperature for gentle cooking.
- Mix Custard and Milk: In a bowl, stir together the pot of fresh custard with the whole milk until smooth and well combined.
- Prepare the Bread: Trim the crusts off the white bread and cut the slices into triangles. Place these bread pieces into a large mixing bowl along with the raisins or dried cherries.
- Combine Ingredients: Pour the custard and milk mixture over the bread and dried fruit. Gently stir the mixture so that every piece of bread is thoroughly coated with the custard.
- Grease the Dish: Lightly butter a small ovenproof dish to prevent sticking and add flavor.
- Assemble and Bake: Spoon the custard-coated bread and fruit mixture into the prepared dish, spreading evenly. Place it in the preheated oven and bake for 30-35 minutes until the custard is mostly set but with a slight wobble in the center.
- Caramelize the Sugar: Remove the pudding from the oven. Evenly sprinkle 5-7 tablespoons of caster sugar over the top. Place the pudding under a hot grill for 1-2 minutes, watching closely until the sugar melts and caramelizes to form a crisp topping.
