Bread Pudding Base

  • 150ml whole milk

  • 568ml pot of fresh custard

Instructions

  1. Preheat the Oven: Set the oven to 140°C (fan 120°C or gas mark 1) to ensure it reaches the right temperature for gentle cooking.
  2. Mix Custard and Milk: In a bowl, stir together the pot of fresh custard with the whole milk until smooth and well combined.
  3. Prepare the Bread: Trim the crusts off the white bread and cut the slices into triangles. Place these bread pieces into a large mixing bowl along with the raisins or dried cherries.
  4. Combine Ingredients: Pour the custard and milk mixture over the bread and dried fruit. Gently stir the mixture so that every piece of bread is thoroughly coated with the custard.
  5. Grease the Dish: Lightly butter a small ovenproof dish to prevent sticking and add flavor.
  6. Assemble and Bake: Spoon the custard-coated bread and fruit mixture into the prepared dish, spreading evenly. Place it in the preheated oven and bake for 30-35 minutes until the custard is mostly set but with a slight wobble in the center.
  7. Caramelize the Sugar: Remove the pudding from the oven. Evenly sprinkle 5-7 tablespoons of caster sugar over the top. Place the pudding under a hot grill for 1-2 minutes, watching closely until the sugar melts and caramelizes to form a crisp topping.
