  • 1kg lamb mince
  • 2 onions, coarsely grated
  • 1 garlic bulb, cloves finely chopped or grated
  • 6 tbsp garam masala
  • Bunch coriander, chopped (optional)
  • 1 tbsp chilli sauce, plus extra to serve
  • Pinch of salt

To Serve

  • 8 pitta breads
  • 4 tomatoes, halved and sliced
  • Half a red cabbage, shredded
  • 1 red onion, sliced (optional)
  • Small pot plain yogurt

Instructions

  1. Mix ingredients: Tip the lamb mince into a large bowl with grated onions, chopped garlic, garam masala, chopped coriander (if using), chilli sauce, and a good pinch of salt. Use your hands to squelch and squeeze everything together until fully combined.
  2. Shape burgers: Pat the mixture into 16 small burger patties. These can be frozen for up to 1 month or kept chilled for up to a day before cooking.
  3. Preheat grill: Heat the grill to its highest setting and line a baking tray with the burgers arranged in a single layer. Depending on tray size, cook in batches if needed.
  4. Grill burgers: Grill the burgers on the highest shelf for 5-6 minutes on each side, until they are browned and cooked through.
  5. Assemble and serve: Arrange the burgers on a platter with pitta breads, sliced tomatoes, shredded cabbage, sliced red onion (if using), and plain yogurt. Let everyone build their own kofta burger sandwiches to enjoy.

Notes

  • For extra spice, add more chilli sauce or fresh chopped chilies to the meat mixture.
  • If you don’t have a grill, burgers can also be cooked on a hot skillet or griddle pan until well browned and cooked through.
  • Freezing the patties before cooking helps them hold together better on the grill.
  • Serve with extra yogurt or chutney for more flavor.
