A delicious and easy-to-make crispy chicken and smashed avocado bap, featuring golden almond and sesame-coated chicken breast served on soft rolls with fresh lettuce and tangy lime-infused avocado spread.

Chicken and Coating
- 2 large skinless chicken breasts
- 100g plain flour
- 1 egg, beaten
- A splash of milk
- 3 tbsp ground almonds
- 1 tbsp sesame seeds
- 3 tbsp vegetable or rapeseed oil
Avocado Spread and Assembly
- 2 small avocados, stoned, peeled and halved
- ½ lime, juiced
- 4 baps or rolls, split
- 1 Little Gem lettuce, leaves separated
- A pinch of salt
Instructions
- Prepare the Chicken: Place the chicken breasts on a board, cover with baking parchment, and bash them with a rolling pin to achieve an even thickness. Then cut each breast diagonally in half to create smaller pieces.
- Coat the Chicken: Pour the plain flour onto a plate and season lightly. In a shallow bowl, beat the egg and add a splash of milk. Dust the chicken pieces in the plain flour, shaking off excess, then dip into the egg mixture. Combine the ground almonds and sesame seeds with any flour left on the plate, then coat the chicken thoroughly in this mixture.
- Fry the Chicken: Heat half of the vegetable or rapeseed oil in a large frying pan over medium heat. Fry the chicken pieces for 4-5 minutes on one side until golden and crispy. Flip the pieces, add the remaining oil, and fry for another 4-5 minutes. Check the thickest piece to ensure it is fully cooked through. Once done, remove and let the chicken rest for 5 minutes.
- Mash the Avocado: Scoop out the flesh of the avocados into a bowl. Add the lime juice and a pinch of salt and mash until smooth and creamy.
- Assemble the Baps: Spread the mashed avocado evenly over the split baps or rolls. Layer with fresh Little Gem lettuce leaves and top with the crispy chicken pieces. Cut the baps in half and serve immediately.

- Ensure the chicken is cooked through by cutting into the thickest piece to check for any pinkness.
- You can substitute the baps with soft burger buns or ciabatta rolls for variety.
- Adding a little chili or garlic powder to the almond and sesame coating can add an extra flavor dimension.
- For a healthier option, bake the coated chicken at 200°C (400°F) for 20-25 minutes instead of frying.
- Use ripe avocados for the best creamy texture in the mash.
