Ingredients
Scale
Chicken
- 1 lb boneless, skinless chicken breasts (diced or shredded rotisserie chicken)
Pasta
- Lasagna noodles, broken or traditional (amount based on package instructions, typically 4 oz)
Cheeses
- Ricotta cheese, 1 cup
- Mozzarella cheese, 1 cup shredded + extra for topping
Broth and Vegetables
- 4 cups chicken broth
- 1 medium onion, diced
- 2–3 garlic cloves, minced
- 2 cups fresh spinach, chopped
Seasonings and Oil
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt, to taste (about 1 tsp)
- Black pepper, to taste (about ½ tsp)
Instructions
- Prepare the chicken: Dice the chicken breasts into bite-sized pieces or shred rotisserie chicken. Set aside.
- Sauté onions and garlic: Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic and sauté for 3-4 minutes until onions are translucent.
- Cook the chicken: Add the diced or shredded chicken to the pot and cook until no longer pink, about 5-7 minutes.
- Add broth and bring to a boil: Pour in the chicken broth and bring the mixture to a gentle boil.
- Cook the noodles: Stir in broken lasagna noodles and cook according to package instructions until al dente, about 8-10 minutes.
- Add spinach: Once noodles are cooked, add fresh chopped spinach and cook for 2-3 minutes until wilted.
- Add cheeses: Lower the heat and stir in ricotta and shredded mozzarella until melted and the soup is creamy.
- Season the soup: Add Italian seasoning, salt, and pepper. Taste and adjust seasoning as needed.
- Serve: Ladle the soup into bowls and top with extra mozzarella or fresh herbs if desired.
Notes
- Use rotisserie chicken to save time and add extra flavor.
- For a thicker soup, add less chicken broth or cook noodles slightly longer.
- Fresh herbs like basil or parsley can be added as a garnish for extra freshness.
- Adjust cheese amounts based on your creaminess preference.
- This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
