Description
This creamy miso beans on toast recipe combines the rich umami flavor of white miso and tender white beans, cooked together with fragrant spring onions and garlic in butter. Served atop toasted sourdough and finished with a splash of lemon juice and optional crispy chilli oil, this dish makes for a comforting and flavorful meal perfect for breakfast, brunch, or a light dinner.

For the Beans
- 2 tbsp butter
- 2 garlic cloves, peeled
- 4 thick spring onions, thinly sliced, white and green parts kept separate
- 1 tbsp white miso
- 400g can white beans, drained and rinsed
- 200ml water
- ½ lemon, juiced
- Salt and freshly ground black pepper, to taste
For Serving
- 2 thick slices sourdough bread, toasted
- Crispy chilli oil, to serve (optional)
Instructions
- Heat Butter and Aromatics: Heat the butter in a frying pan over medium heat. Lightly bash the garlic cloves using the side of your knife and add them to the pan along with the white parts of the sliced spring onions. Stir to coat them in butter and fry gently for 3 to 4 minutes until fragrant and softened.
- Add Miso and Beans: Stir in the white miso paste and add the drained white beans along with 200ml of water. Bring the mixture to a gentle simmer and cook for 4 to 5 minutes, allowing the flavors to meld and the beans to soften further.
- Mash the Beans: Remove the garlic cloves from the pan. Using the back of a wooden spoon, press some of the beans against the side of the pan to lightly mash them, creating a creamy texture while leaving some beans whole for bite.
- Season and Add Spring Onion Greens: Stir in half of the green tops of the spring onions. Season with salt, freshly ground black pepper, and the juice of half a lemon to brighten the dish.
- Assemble and Serve: Spoon the creamy miso beans over the toasted sourdough slices. Drizzle with crispy chilli oil if using, and garnish with the remaining spring onion greens. Serve immediately for a delicious and comforting meal.

- Use white miso paste for a milder, sweeter umami flavor; red miso will give a stronger, saltier taste.
- For a vegan version, substitute butter with olive oil or vegan butter.
- Adjust the amount of water depending on desired creaminess; less water will yield a thicker consistency.
