  3. Step 3: Gently lower half the battered courgettes into the hot oil. Fry, turning once after 1 minute with a slotted spoon, for a total of 5–6 minutes until golden and crispy. If the fries stick together, carefully separate them using tongs.
  4. Step 4: Remove the fries from the oil and drain them on a plate lined with kitchen paper. Repeat the frying process with the remaining battered courgettes.
  5. Step 5: Once all fries are cooked, scatter the grated parmesan over them and serve immediately while hot and crisp.
