Description

  • 4 large baking potatoes
  • 2 tsp olive oil

  • 200ml soured cream
  • 50g cheddar, grated
  • 4 crispy bacon rashers, chopped
  • 4 spring onions, thinly sliced

Instructions

  1. Preheat and prepare potatoes: Heat the oven to 220C/200C fan/gas 7. Rub each potato with a little olive oil to coat the skin evenly. This helps to crisp the skin during baking.
  2. Bake the potatoes at high heat: Place the oiled potatoes on the top shelf of the oven and bake for 20 minutes. This initial high temperature jumpstarts the cooking and skin crisping process.
  3. Reduce temperature and continue baking: Lower the oven temperature to 190C/170C fan/gas 5. Bake the potatoes for an additional 45 minutes to 1 hour until the skins are crisp and the inside flesh is soft when tested with a skewer.
  4. Prepare the potato for serving: Remove the baked potatoes from the oven. Using a knife, cut a cross shape on the top of each potato. Gently squeeze the sides to open up the potato, creating a pocket.
  5. Add toppings: Place a generous dollop of soured cream into the potato, then sprinkle with grated cheddar cheese. Top further with chopped crispy bacon and thinly sliced spring onions to add flavor and texture.

  • For extra crispy skin, prick the potatoes with a fork before rubbing with oil.
